In a nutshell

A permanent pop-up of food pop-ups. Brands get a 'residency' in the store to be promoted, get metrics and traction. It's a curated, discovery store.

In their words

"Pop Up Grocer is the discovery destination for new, better-for-you products" "A platform for possibility".

The curated brands number one or two per category (so there's competition and insights, but not an overwhelming quantity. The layout avoids high/low shelves, with everything towards eye-height. Products have three requirements: to be new/novel; to have a compelling 'founder story'; to be sustainable. This is a cafe-store-experiment store which the founder, Emily Schildt, calls a "platform for possibility". There is a monthly subscription "discovery" box option too. Upon visiting in November 2024 it was good to see that the original approach has been retained and there there are new products on display. The team has confirmed that the store itself is permanent and no longer a 'pop-up', even though the products it sells are themselves pop-ups.
